Colleen's Irish Potato Soup
I use a 6 qt crock pot, but you can cook it right on the hob in a soup pot too.
1 qt chicken stock... ( I use either canned, or make my own, but you could also use boullion if that suits you, it makes no real difference in flavour)
4 medium potatoes cut up in small pieces (but not peeled) and parboiled if you want to speed things up a bit, otherwise, throw em in the crock pot and let em cook all day.
1tablespoon butter
1quart of milk or half and half if you want it richer.
1/4 cup of celery leaves chopped up small
1 1/2 cup (more or less) of finely shredded cheese (cheddar is nice or I like Colby), or about a half of a medium Velveeta works real well too, it melts nice and doesn't get stringy at all while you are stirring it.
Now, here's what you do....
Bring chicken stock to boil (if cooking on the stove).
Add the potatoes, the butter, and celery leaves and let cook untill potato pieces are tender if coooking on the stove (or, for about 4 hours in the crock pot on low), then add the milk and some pepper (I like it all sort of peppery, so let's say "to taste") You don't need any salt if you used canned chicken stock, but add a bit if you used homemade chicken stock. (Now at this point, you can also add any veggies you may like.... mushrooms are delicious in this, or broccoli, as I said, or whatever you like...experiment!)
Next:
In a small bowl, take a fork, one cup of flour and 2 medium eggs, and with the fork, mix it up. It should be sort of grainy, not all smooth. Add a bit more flour if it's not grainy in texture. Sprinkle small amounts of that into the soup and keep stirring it. Cook it for 15 mins (if cooking on the stove) or at least another hour in the crock pot. Take your time with this, as you don't want one big lump of dough to form in the bottom. This part gives the soup some substance and the kids love the "lumps", as you will too!
I like to make this in the morning before going to work. I let it cook all day long reserving the milk and the lumps till I get home. At that point, I add the milk and the lumps (that is what we call them - they are not quite dumplings, not noodles. lol ) and let it cook for about an hour in the crock. Then serve...it thickens up and is so yummy. My daughter's boyfriend begs me to make it, and he says that it gets better on the second day!
