GRANNY MAE'S COLLARD GREENS
2 lbs. fresh collards
5 tbsp. corn oil
1 cup sliced pork, or 3 oz. bacon
1 1/2 cups water
4 tsp. sugar
1 tsp. sea salt
1) Wash the collards two or three times and make the dirt has been removed. Coarsely chop the greens.
2)Heat the oil in a large pot and then add the meat and cook until partly browned on all sides, about 5 minutes. Add the water and bring to a boil. Reduce the heat and simmer for 15 minutes. Add collards to pot. Add the sugar and salt. Cover and cook on medium heat about 30 minutes.
3) Serve using a slotted spoon.
