McCridhe's Totellini Soup

McCridhe's Totellini Soup

Broth.
Any sort... depends on what type of tortellinis you use to some extent.
I like to make the broth from Knoor Broth Concentrates... they're not salty (you have to add salt as a matter of fact) like canned stuff, doesn't take forever like the real stuff. (Don't even suggest boullion!!! YUUUUUUCK!!!)

Soup Veggies.
What ever you like.

Tortellinis.
What ever you like. Cheese, Portabello, Sausage, Chicken, Beef... what ever.
For the big tortellinis... 5 or 6 per bowl.
For the little tortellinis... up to a dozen per bowl.

Cook the soup like you're just preparing the tortellinis by themselves. (I like my veggies a little crunchy. If you like mushy veggies, you may need to cook them a little longer...)

Surprizingly, for a brothy gut wash type soup, it's quite filling. Stray Dog complains that I get carried away with adding stuff and make too much... but it's a nice quickie for a chilly noon time meal.

My very special thanks to Kate McCridhe for this one.
