Easy Chicken Pot Pie
Both of my oldest kids love this!! Even my 4 year old who is extemely picky; however, DH didn't really care for it.
2 Leftover cooked chicken breasts, or any chicken parts, shredded or cubed.
1 box refrigerated pie crust (2 crusts per box)
1 cup baby carrots
2 stalks celery sliced
2 medium potatoes, peeled and cubed in
small pieces
1 family size can of Cream of Chicken Soup (I didn't have a "family" size, so I used 2 regular sized cans)
1/cup brocoli florets
1/2 c. diced onion
3/4 cup water
Empty can of Cream of Chicken soup in a medium stock pot with water.
Add carrots, potatoes, celery and onion.
Add chicken.
Let simmer till potatoes and carrots are tender (about 15 minutes), stirring often.
Add brocoli.
To prepare crust, follow instructions on pie crust box. I used the "easy" kind so all I had to do was just unroll it ;-).
Line bottom of pie pan with one crust.
Fill crust with chicken filling.
Top with top crust. Fold over remaining crust to secure edges, cutting of excess.
Cut slits on top crust. (about 6)
Bake in 350 degree preheated oven for about 1/2 hour or until crust is light brown and crisp.
Serve warm.
