Oven Roasted Vegetables
1 med zucchini
1 med summer squash
1 med red bell pepper
1 med yellow bell pepper
1 lb fresh asparagus
1 vidalia or red onion or scallions bunch
Cut into bite size pieces
3 teaspoons extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon ground pepper
Heat oven to 450 F. Place cut vegetables in a large roasting pan. Toss with the olive oil using your hands to rub the oil all over the veggies, salt, pepper. Spread into a single layer in the pan. Roast for 30 minutes, stirring occasionally until the vegetables are lightly browned and tender
Serves 4 (adjust veggies to what you need)
Awesome!
Variation: you can sprinkle with parmesan before roasting.
