(a mashed potato substitute)
Steam or microwave Cauliflower in a little water until very soft; drain well, and then put in a food processor with a scoop of fat free sour cream, salt, pepper, and 2 T. I Can't Believe It's Not Butter Spray and process until smooth. You can also add a little garlic salt or garlic powder.
Note: For the best texture drain the cauliflower well before putting it in the food processor, even dry it with some paper towels to get the excess water out, the drier the better.
I use my Braun Hand Blender to mash the cauliflower and I get great results, but any blender or food processor should work.
You can't use a hand "mixer" though as it won't make it smooth enough and will be lumpy.
Serving Size = 1 1/2 cups
