2 Point COCONUT CREAM PIE



*2 Point COCONUT CREAM PIE

No baking! Takes 10 minutes to make. Make this the day before or at least 6 hours before eating it.

In a teflon pan carefully brown 1/4 cup shredded coconut until lightly browned all over. Set aside to cool.

Prepare 1 package Instant Sugar Free Coconut Pudding with 2 cups FF Milk or Soy Milk (I couldn't find the SF Coconut pudding so I used Vanilla Pudding and added 1 tsp coconut extract to it.)

Put 1 layer of Fat Free Saltine crackers on bottom of a square or rectangular pan. (About 8 crackers, you may have to break some in half to fit them in).

Note: Don't turn your nose up at the crackers! After the pudding soaks into them they taste just like pie crust in this recipe!

Pour on half the pudding and spread evenly.

Sprinkle half the coconut over the pudding.

Layer another layer of crackers (another 8).

Then the rest of the pudding on top of that and finally sprinkle the rest of the coconut on top.

Cover with plastic wrap and refrigerate at least 6 hours (but it really tastes best the next day)

Serve with cool whip on top.

Makes 4 generous servings or 6 smaller servings.
Whole thing = 670 calories or 13.5 points

If cut into 4 servings each serving equals: 170 calories; 3.5 pt

If cut into 6 servings each serving equals: 115 calories; 2.5 pt

Worth it!

*Note if you want to decrease the crackers to just one layer on the bottom for the crust here are the revised numbers:

Cut into 4 serv. each serv. equals 144 calories; 3 pt
Cut into 6 serv. each serv. equals 96 calories; 2 points
