Pineapple pie for breakfast
Pineapple pie for breakfast:
Crust:
4 slices bread, toasted and crumbled in blender
1/4 C water
1 t vanilla
sweetener to taste
Filling:
1 15 oz can unsweetened crushed pineapple, drained (save juice)
1 pkg plain gelatin
1/4 C cold water
3/4 C reserved juice
1 8oz cottage cheese
1/4 t salt
1 T lemon juice
Crust:
Combine liquids and add crumbs.
Press into 9" pie pan. Bake 400 for
10 minutes. Cool completely.
Filling:
Bring juice to boil and add gelatin which has been dissolved in cold
water. With
the exception of pineapple, put everything
in blender and blend thoroughly. Chill
mixture in refrigerator until thick. Re-blend
in blender, pour into pie shell, after blending in pineapple. Chill in refrigerator then divide into fourths. Each section 1/4 serving = 1 fruit, 1 cottage cheese and 1 bread for breakfast.
