Pineapple Cheese Cake
Pineapple Cheese Cake:
3 pkgs. unflavored gelatin
1/2 C juice from pineapple
1 qt buttermilk
5 t liquid sweetener
yellow food coloring
16 oz crushed pineapple in its own juice, drained.
Dissolve gelatin in 1/2 C juice. Heat until smooth. Remove from heat, add buttermilk, sweetener and dash of yellow food coloring. Stir until blended. Chill in
frig. While still soft, stir in drained pineapple. Pour into 8" square pan.
1/4 of cheesecake equals 1 fruit and 1 milk.
