1 Point Egg Rolls

1 teaspoon Fresh Ginger, minced
3/4 Cup Carrots, shredded (approx. 2 carrots)
2 Medium Garlic Cloves, minced
1 Tablespoon Low Sodium Soy Sauce
2 Medium Scallions (white and green parts), chopped
1 Cup Cooked Rice*
1/4 teaspoon Black Pepper
1 Small Head Cabbage, shredded
17-18 Egg Roll Wrappers
Nonstick Cooking Spray
* Or for chicken egg rolls, you can use 5 oz. Cooked Chicken cut into small pieces. This doesn't change the points, just don't use the rice.
Preheat oven to 350 degrees.
Spray a baking sheet with nonstick spray.
Place cabbage in a microwavable dish and cover.
Microwave on high until wilted, about 5-10 minutes.
Drain, and transfer to a large bowl.
Add carrots, garlic, scallions, and ginger. Mix well.
Arrange egg roll wrappers on a clean, dry surface.
Spoon 1/3 cup of cabbage mixture diagonally onto a wrapper, then fold one corner to cover filling. Fold up both corners on the sides. Moisten edges of remaining flap with water and roll up wrapper jellyroll style until sealed. (Some egg roll wrappers have the folding directions illustrated on the back of the package).
Transfer egg rolls to prepared baking sheet and coat with cooking spray.
Bake until golden brown, about 25 minutes.
Serve with sweet and sour sauce or sauce of your choice. Just be sure to add the necessary points for the sauce. :)
Note: These freeze well. I make a couple of batches up at a time, then pull what I want out of the freezer. To freeze, do not bake ahead of time. After rolling up each egg roll, place them on a cookie sheet so they aren't touching and place in the freezer until frozen. When they are completely frozen, place them in a freezer bag marked with the points and baking directions (this makes it easier to bake without having to look the info up). To use, place the egg rolls in the microwave on defrost for about 5 minutes, or until completely thawed. Then just follow the baking directions stated above.

Another egg roll recipe I found but sounds easier:
Egg Rolls
Egg Roll wrappers
1 bag coleslaw mix
green onions
ground chicken, turkey or beef
ginger
garlic
soy sauce
Cook the meat and add some soy sauce, garlic and ginger to season the meat. Then put the meat, green onions and coleslaw mix in the wrappers and fold, tucking in the ends. You can either bake them or fry them in a little olive oil.
