Val's Pasta ChiChi
First number is Points/second is calories
In a medium pot put:
1 can of diced tomatoes = 0 / 85
1 small (7 3/4 oz) can Chick Peas = 2 / 165
1 can Fat Free Veggie broth (or chicken broth if not a vegetarian) = 0 / 20
1/2 frozen block chopped spinach = 0 / 25
(or 2-4 cups of fresh)
2 oz (dry weight) any pasta = 4 / 210
Add some garlic powder or chopped/minced garlic
and some fresh basil (or few shakes of dried)
Salt to taste
Bring to a boil, put the lid on and turn down heat to med-low, simmer for about 15-20 minutes until pasta is cooked.
Remove from heat and take off the lid. Let it sit for another 10 minutes to thicken.
Makes 2 meals if served with a salad. Or makes 4 servings of a side "soup"
Whole batch = 6 points / 500 calories
As a meal = 3 points each / 250 calories
As a side = 1.5 points each / 125 calories
Optional: Serve with grated cheese.
*(if you add the grated cheese, add the points/ calories for that too)
