Fetta-Zuka-Chini
Fetta-Zuka-Chini - 1 large serving

2 oz. dry fettucini pasta (or No-Yolk noodles - the really fat ones that are called dumplings) (4 points)
1 medium zucchini (0 points)
1/4 cup prepared spaghetti sauce (1 point)
1 T Peccorino Romano or grated Parmesan (1 point) (optional)
Put a pot of water on to boil.
Prepare the zucchini by using a potato peeler and making thin full length slices, keep them narrow, slice then turn the zuke, slice then turn, do that until you come to the seeds and stop (save the remaining zuke for soup). You should have a pile of zuke strips. (or you can use a food processor to make very thin slices but I like them to look the same as the noodles I'm using)
Put the pasta in the pot to boil and note the cooking time on the box. When there is ONE minute left to cooking time put in the zucchini with the pasta, stir, and after 1 minute drain well (really well!). Pour into a nice size bowl (I use a glass pie plate). And top with spaghetti sauce and fresh grated Peccorino Romano cheese.
