EGGPLANT STACKS
(whole thing = 8 points)

1/4" (1cm) slices eggplant (whole med. eggplant)
1/4" slices red onion (separated into rings) about (1/2 medium)
1/4" slices of fresh tomato (whole large)
1/2 cup shredded LF Mozzarella cheese
1/4 cup freshly grated Peccorino Romano or other grated cheese like Parmesan
1/2 cup dry bread crumbs
1 tsp dried basil
garlic powder

Mix the cheeses together.

Spray a casserole dish with PAM. Sprinkle 1/3 of the bread crumbs in the bottom. Layers: Eggplant, onion rings, tomato, pinch of the basil & garlic powder, S&P, and another 1/3 of the bread crumbs and 1/2 of the cheese. Make one more layer ending with the cheese.

Seal with foil tightly and bake for 50 minutes on 350 degrees. Remove foil and bake another 10 minutes to brown cheese.
