Easy Veggie Burgers



Easy Veggie Burgers Makes 6

Ingredients:
1 small zucchini grated
1 medium uncooked potato, peeled & grated
1 medium carrot, grated
1/4 cup onion, grated or minced
3/4 cup egg substitute
pepper to taste

Directions:
In a bowl, combine ingredients, mix well. Pour about 1/2 cup batter on hot griddle, lightly coated with non-stick cooking spray.

Fry 2-3 minutes on each side or until golden brown. Works great on George Foreman grill (tilt it up a little if too runny).

Diabetic Exchange, per burger: 1 vegetable, 1/2 lean meat 1 serving: Calories: 57 Sodium: 63 mg Cholesterol: trace Carbohydrate: 8 g Protein: 5 g Fat: 1 g Fiber: 1 g
