Turkey Tarragon Cutlets

Turkey Tarragon Cutlets
Preparation Time: 50 minutes
Serves 4
Vegetable cooking spray
2 teaspoon olive oil
1 1/2 pound turkey breast cutlets (4- 6 oz cutlets)
1- 6 oz package sliced button mushrooms
2 cloves garlic, peeled, minced
1 cup low salt chicken broth
1 can (10 3/4 oz) Healthy Request® Cream of Mushroom soup
1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
1/4 teaspoon ground black pepper
Spray large nonstick skillet with vegetable spray. Heat oil over medium high heat. Add cutlets and cook 5-7 minutes, turning once, just until they begin to turn light brown. Remove from pan, set aside and keep warm.
Reduce heat to medium. Add mushrooms and garlic to skillet and sauté 3-4 minutes until browned and tender. Add chicken broth and bring to a boil. Stir in undiluted soup, tarragon and black pepper; return to boil. Add cutlets, reduce heat to medium and continue to cook, turning to coat, until cutlets are cooked throughout and no longer pink inside, about 10-12 minutes.
Serve immediately.
