Wilted Spinach Salad


Rachael Ray's Wilted Spinach w/garlic and EVOO

Wilted Spinach with Garlic and EVOO

The Food Network

4 servings/Cook time: 6 minutes

*2 Tab. Extra-virgin Olive oil
4 cloves garlic, minced
1 lb triple washed spinach, stems removed (takes time, do ahead and make sure it is dry)
1/2 teasp. ground or freshly grated nutmeg
Salt and Pepper

Heat a skillet over medium heat. THEN, add oil and garlic. Saute garlic in oil 2 or 3 minutes. Add Spinach to the pan in stages. Fill the pan with leaves and turn leaves in warm oil until they wilt. Add more spinach to the skillet and repeat the process until all of the spinach is incorporated. Season the wilted spinach with salt and pepper and nutmeg..serve warm.

*WW Note: Use less oil and the only points you will have are 1 point for each teaspoon of Olive oil that you use.
