0-Point Garden Vegetable Soup


This is a WW staple -- very tasty-- and is 0-points and a CORE friendly food. Feel free to add other 0-point veggies to it like spinach, more zucchini, broccoli, cauliflower, mushrooms, and others. I have even added chicken to this and made it a full meal - also Core friendly!

Garden Vegetable Soup

2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves minced
3 cups fat free broth (2 cans) you can use chicken broth, beef broth or vegetable broth
1 1/2 cups diced green cabbage
1/2 cup green beans
1 T. Tomato Paste (instead I used 1 can of diced tomatoes)
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini

Spray a large saucepan with nonstick cooking spray, heat. Saute' the carrot, onion, and garlic over low heat until softened, about 5-7 minutes.

Add broth, cabbage, beans, tomato paste (or canned tomatoes), basil, oregano, and salt. Bring to a boil. Reduce heat; simmer, covered, about 15 minutes or until beans are tender.

Stir in the zucchini and heat for 3 to 4 more minutes.

Serve Hot.
