Val's 2 Point Chocopump Muffins

Note: I made these and they are good! They taste like chocolate cupcakes. You can't really taste the pumpkin but it adds a lot of fiber and a nice texture.

This makes 20 cupcakes at 2 points each.

1 package Betty Crocker® SuperMoist milk chocolate cake mix (or devil's food cake mix)
2 egg whites
1 can Libby's 100% pure pumpkin, canned -- 15 oz.
1 cup water

Mix everything together with a hand mixer for about 2 minutes until smooth. Note - this will be thicker than typical cake batter.

Line a muffin pan with foil liners or spray with a non-stick cooking spray. Fill 20 cups evenly (about 2/3 full). Bake at 350ºF for 18-20 minutes or until a cake tester inserted into the center of the muffin comes out clean. (mine took 20 min.)
