Citrus Baked Fish

Recipe from Recipe4Living.com

2 lb. fish steaks
1/2 C. onion, minced
2 cloves garlic, minced
2 Tbs. olive oil
2 Tbs. fresh, minced cilantro
1 tsp. salt
1/8 tsp. pepper
1/2 C. orange juice
1 Tbs. lemon juice

Arrange the fish in a shallow baking dish. In a small skillet sauté the onion and the garlic until the onion is tender but not brown. Into the pan, stir in the cilantro, salt and pepper. Spread the mixture over the fish. Combine the orange juice and lemon juice and pour evenly over the fish. Bake, uncovered, in a 400 degree oven for about 20-25 minutes, or until the fish flakes easily with a fork.

The only kind of fish I'd use would be Cod. I don't know if I would like anything else cooked in OJ.

Sounds good, and I think any firm white fish would do. We love fish and try to have it as often as possible so I'm always on the lookout for new healthy recipes!

Am allergic to shellfish though so have to pass on the shrimp and crab etc. Still that's not good for cholesterol which is a problem my husband has. Mostly I bake or grill fish and it's also good on the barbecue.
