Italian Sausages


They are higher in points than other meats but every so often I just have to have some! emoticon

Over a medium heat in a heavy frying pan, with a few tsp. of Olive Oil, brown the sausages on all sides. Add 1 cup of sliced onions and 1 cup of sliced green peppers, brown the veggies and sausages for another 5-8 minutes, turning often. Add a carton of sliced fresh mushrooms and 1 cup of water and simmer covered for 1/2 hour. Check to see if it needs more water and add if needed (you don't want to burn it!), then simmer for another 15 minutes. Serve on Italian Rolls or over rice or pasta.

Note: you could add tomato sauce to this instead of water for a different taste. I do it both ways. emoticon
