Cheesy Salsa Chicken Breasts
Preheat Oven: 350°F
4 boneless, skinless chicken breasts
1 small jar of Salsa (I only used 1/2 a regular jar)
1 cup shredded Sharp cheddar cheese (can use low fat)
Optional garnishes: Green onions & sour cream
Put 4 boneless, skinless chicken breasts into an 8 X 8 pan sprayed with Olive Oil Spray. (I used my cast iron skillet and it worked great)
Pour the Salsa over the chicken.
Bake in 350-degree oven for about 25 min. You can check before that time but my breasts were thick.
Remove from oven & add the cheddar cheese over the top of each breast (at this point you can sprinkle the green onions on top or wait until you serve it, or don't use them at all.) Return to oven until cheese is melted & bubbly. (another 10 minutes)
If desired, top with a dollop of low-fat sour cream when serving.
Note from Val: this was really good and so easy to make. It gave the chicken a great flavor and I'll be making it often.
