Crunchy Cheese and Macaroni!


Coat a baking dish approx 25cm by 40cm with a thin smear of butter. Put aside. (Glass dish is best.)
Preheat oven to 185C.
Cook 650gm dry pasta until just tender. Drain well.
In a large mixing bowl, place cooked pasta and sprinkle with 1 gm black ground pepper, 1 gm salt and a dash of finely ground cayenne pepper. Stir well.
Grate 450 gm each of extra sharp cheddar and monterey jack cheeses. Mix well.
Add the cheeses to the macaroni and mix well. Pour into baking dish. Spread evenly.
Melt 25gm butter and allow to cool. Measure out 250 ml whole milk and mix with melted butter.
Coarsely grate 120 gm sharp cheddar cheese. Sprinkle sharp cheddar over macaroni mixture evenly. Pour milk and butter mixture evenly over pasta.
Bake uncovered for about 45 minutes. Raise oven heat to 205C and continue baking 15-20 minutes more until crusty on top and bottom.
Cool for at least 10 minutes and enjoy! Feeds 10 to 15.
