iron skillet cobbler


I heavily modified a recipe for cobbler, and it turned out great. It's quick and easy too. Hope ya like it.

1/2 cup brown sugar, loosely packed
1 cup sugar
1 1/3 cups flour
2 tbsp double acting baking powder
1/4 tsp salt
1 can (20 ounce) cherry pie filling
2/3 cup dried fruit chopped into 1/2 inch or so bits
1/4 cup butter
1/2 cup whole milk
1/4 cup whole buttermilk

Preheat oven to 375 F.
Melt butter in a medium iron skillet until liquid, remove from heat.
Add brown sugar, pie filling and dry fruit to the butter in the skillet and mix slightly.
In a separate bowl, mix remaining dry ingredients well. Add milk and buttermilk and stir well.
Pour over fruit mixture in pan. Do not mix into fruit. Allow space without flour mixture on edge of pan, or pour mixture in circular shapes allowing small areas of fruit mixture visible.
Bake for 25 to 30 minutes, until top is browned slightly. Turn off oven and leave pan in oven until top browns nicely. It will not be too dark. Try not to open oven until it looks ready.

Great with ice cream!

To cook on grill or campfire, prep as stated. cook uncovered over medium hot coals til top starts to brown. cover with foil tent loosely. put on warm coals 15-30' til brown.
