MINT THINS
from Kraft Foods
* Prep Time: 20 min
* Total Time: 20 min
* Makes: 3 doz. or 12 servings, three coated crackers each
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate
1/4 tsp. peppermint extract
1 sleeve RITZ Crackers (36 crackers)
1 peppermint candy cane (6 inch), crushed
MICROWAVE chocolate in small microwaveable bowl as directed on package. Stir until completely melted. Blend in extract.
DIP crackers in melted chocolate, completely coating crackers with chocolate. Carefully scrape off excess chocolate. Place on waxed paper-covered baking sheets; sprinkle with crushed candy.
REFRIGERATE 30 min. or until chocolate is firm.

Chocolate-Peanut Butter Cookies
Omit peppermint extract and candy cane. Spread each cracker with a thin layer of peanut butter before dipping into the melted chocolate.
***** I made two batches of these today. Mine did not yield as much as the recipe specified; I only got 24 out of each batch instead of 35, so maybe my chocolate coating was thicker; but they are still very good!
I made one batch with the peanut butter and one batch mint. With the mint, instead of topping with crushed candy cane, I used red, white & green sprinkles
