Ingredients

 
4 Mission® Light or Fat Free Soft Taco Size Flour Tortillas
1/2 medium red onion, thinly sliced
1 medium yellow bell pepper, thinly sliced
3 large plum tomatoes, seeded and thinly sliced
1 tsp. Red Jalapeños, seeded and minced (optional)
1 small bunch spinach, stems removed, thinly sliced
3 tbsp. low calorie Italian Dressing
1 1/2 cups reduced-fat Gouda cheese, shredded, or Monterey Jack cheese

 
  
Directions

1: Preheat oven to 500 degrees F. Toss all ingredients (except tortillas and gouda cheese) in a large bowl and marinate for 10 minutes.
2: Warm tortillas in an un-oiled skillet until crisp. Stir one cup of cheese into vegetable filling. Divide cheese mixture among 4 tortillas.
3: Sprinkle tops with additional 1/2 cup of cheese. Place tortillas on sheet pan and bake for 10 minutes or until cheese melts.
4: Cut tortillas into 4 wedges and serve
