What it means to live Simply
I learned a lesson in this yesterday. I went shopping for a new stove and I could have easily bought the one with all the bells and whistles, but instead I chose the one that was simple, you know just four burners, basic oven, I think it had a light on it and it had a broiler feature. I decided that is all I needed. I ended up saving myself some money in the long run and I still got a nice stove.
I could easily go get a new laptop but I am taking the one I have in to see if he can give me any upgrades. I could spend money I don't have on the ultimate bed for my son, but instead I can buy a lower priced bed frame and paint it in the design I know he would like better.
I have learned being on a fixed income that you can make it if you need to. I could have a house phone and a cell phone but I don't need both. A cell phone is actually more practical as I can be reacehd anywhere if something happens to Anthony at school.
In the comming week I learn how to make it without a stove until the new one can be delivered next week. Thankfully , the bf has a cookstove down stairs in his army gear.
So I guess to me living simply means learning how to live within your means financially. Which is the same way I have been running this group the last two years. I have been operating within our means. Yes we don't have the perks of a bigger group, but we have been there through thick and thin with each other no matter how our income levels look. I am now at the point where I have learned a few things along the way and can now start offering those bells and whistles to my group.

This morning I found out the stove isn't being delivered for another week and half due to damage done during off loading of the cargo. So now I am having to rough it for anohter week over what I thought I was going to.
Is not so bad, I won't have a high gas bill next month and I don't have to worry about eating anything fried unless I go to a place to get fried food. I also get to challenge myself to find healthier eating out alternatives in the next week and half. Not to mention I get to check out where the best spots are to get a free meal if need be. Like next week I am going to a luncheaon and then we have lenten supper, and my WELCA group so three opportunities there to save a few dollars on eating out.
I have a T bone steak in the freezer so the bf's cookstove may have to be unearthed lol so I can have a steak.
I also have learned to not spend extra money on things so I can have that extra to eat on if I need it. True I am on a limited income, but that is even more of a reason to keep watch on my pennies and learn how to keep things economically simple.

With the cost of gas these days I am watching how much I am on the road and trying to 'chunk' my errands as much as possible.I went two weeks on one tank of gas, not too bad.Then again I have always been one to try hard to live within my means so learning how to live simply this lenten season is really proving not to be too difficult for me.

I am four days away from getting my stove yeah. Microwave cooking is getting tough lol. I am thawing out chicken Tuesday and having baked chicken, corn on the cob, and dinner rolls for supper. LOL.
Living simply through not having gas to cook with has been a challenge these past two weeks. I have been using my Foreman grill though and that is great for hamburgers, small cuts of steak, and chicken.
I will confess I miss my mash potatos, and gravy. Yes I know that is bad lol, but I use skim milk in my instant potatoes to cut down the fat. I didn't go anywhere today cause it was cold, and I would have had to put a dollar in my hunger bank for everytime I drove so I stayed home. Means I don't have money to spend over the weekend but oh well. I will be ok. I got enough to put some time on my phone and have a little left over then I will get to the bank on Monday.It is amazing what you can truely live without when you need to.

Try adding chicken broth to your mashed potatoes instead of milk...it tastes just as good and is healthier.
