… i'd honestly rather pay for decent health care then have it covered by OHIP like it is in Canada..
when you go to the doctor here, you can spend hours waiting to be seen and they basically take a quick look at you and send you on your way.

Yeah, but I have experienced long waits too with a non-nationalized coverage.
I was watching today that Ireland has a hybrid system of both public and private, with 50% opting to add private insurance on top of the public one so they can have private rooms, choice of facility etc. This sounds to me like higher costs actually - a tax in addition to private premiums.

… For the majority of things we'll use the public health system, on certain stuff we'll use our private health cover.
You get taxed more if you are past the tax-threshold on the medicare levy if you don't have private, it's a way of lessening the strain on the public system.
