Pumpkin Streusel Squares

(I serve this at the holidays)

1 3/4 cups of flour
1/3 cup of brown sugar
1/3 cup of granulated sugar
1 cup of cold butter, cut into small pieces
2 cups of pumpkin (1 - 16oz can)
1 cup of chopped pecans (or any nut you prefer)
1 can (14oz) sweetened condensed milk
2 eggs
1 teaspoon of cinnamon
1/2 teaspoon of ground allspice
(OR, you can use 1 1/2 teaspoons of pumpkin pie spice)
1/2 teaspoon of salt

Preheat oven to 350. In medium bowl, combine flour and sugars. Cut in butter until crumbly. Stir in nuts. Reserving 1 cup of mixture, press remainder firmly on bottom and halfway up sides of 12 X 7 baking dish. In larger mixing bowl, combine remaining ingredients. Mix well. Pour into prepared dish. Top with reserved crumb mixture. Bake 55 minutes, or until golden. Cool. Serve with ice cream if desired.

Refrigerate leftovers! (if there is any, lol)

Don't let this recipe fool you ... it is simple, and delicious!

Swedish Strips

1 cup butter
1 cup brown sugar
2 1/4 cups flour
1 egg
1 Tsp. vanilla

Mix all together and press out on cookie sheet. Bake at 325 - 350 degrees F for 20 minutes.

While still hot, spread jam on top. Sprinkle with crushed nut meats and then icing sugar.

Cut into strips.
