Breads, Rolls, Muffins

There is nothing like the smell of bread baking. Please share your bread, roll, or muffin recipes here.

This might actually qualify for sweet stuff. but it is bread.

Strawberry Bread

3 cups of flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups of sugar
1 teaspoon of salt
1 cup of nuts

2 (10oz) packages frozen strawberries, thawed
1 1/4 cups of oil
4 eggs beaten well
1 teaspoon of red food coloring (optional)

Sift all dry ingredients in a large bowl, and make a well in the center. Add strawberries with juice, oil, eggs, and food coloring. Mix well by hand. Pour into two greased and floured loaf pans. Bake at 350 degrees for one hour, or until toothpick comes out clean. Cool before removing from pans.

Bread freezes well. You can also make a cream cheese topping by adding 1/2 cup of strawberry juice to 1 pckg of cream cheese.

This also makes great xmas gifts.. I usually buy those smaller foil loaf pans at the store.. makes about four loaves in those.

Buttery Corn Bread.

(If you are not a big fan of dry tasteless cornbread, this is the recipe to try, it comes out more cake like and it's wonderful!!)

2/3 cup of butter
1 cup of sugar
3 eggs
1 2/3 cup of milk
2 1/3 cups of flour
1 cup of cornmeal
4 1/2 teaspoons of baking powder
1 teaspoon of salt

In a mixing bowl, cream butter and sugar. Combine the eggs and milk in a separate bowl.
In another bowl, combine all dry ingredients. Add dry and liquid indgredients to creamed butter mixture alternately. Pour final mixture into a greased 13X9 baking pan. Bake at 400 for 22-27 minutes, or until toothpick comes out clean.
