Perfect Bean & Barley Vegetarian Soup
I just love this recipe - it's so easy to make and so nutritious.
Ingredients:
1 Tbsp olive oil
2 large carrots, sliced
2 stalks celery, sliced
1 large onion, chopped
900 ml vegetable broth
1 can (19 oz) mixed beans, rinsed & drained
2 cups diced plum tomatoes
1/4 cup uncooked pearly barley
2 cups firmly packed chopped fresh spinach leaves
ground black pepper
Directions:
Heat oil in large saucepan over med-high heat. Add carrots, celery & onion. Cover & stir until vegetables are tender.
Stir in broth, beans, tomatoes & barley. heat to a boil. Reduce heat to low. Cook & cover for 30 mins until barley is tender.
Stir in spinach & season to taste with black pepper. Cook until spinach is tender.
YUMMMMM ...
Note: If you use vegetable cubes for the broth, it may have enough salt, so don't add any until you taste it! xox

Bisquick's Impossible Bacon Pie
This is a quiche, oh do I have memories of this one. Being rasied in a family where my N other was the single parent, we all filled roles, my sisters and eventually me, filled the role of preparing dinner, especially on the week nights.
My sister used to whip this up...yummy. The last time I remember she tried to make it for us, the Bisquick had worms in the box, that happens with flour and Bisquick.
I remember my sister rushing around trying to get this ready before my N mother came home
I was my sisters helper, the cheese that it calls for, yeah sure you can buy already shredded but in my family we bought the bar kind and shredded it ourselves, think it is a little less expensive as well, vs the already shredded kind. So my job was to man the food processor, oh man did I love that food processor, so much better than shredding it by hand, Ouch I always cut myself on the hand shredder.
How cool to stick a bar of NY Sharp Chedder cheese in a machine and press a button and BAM! Shredded in seconds...that rocks!
The other thing about this quiche is BACON!!!! OMG do I love BACON!!!!
What memories of my sister cooking up the bacon, we would let it cool down and then rip it in pices, little tiny bits...fun part was ripping off pices and them eating the BACON...yummy. My sister would say "Gabs, I see you eating the bacon, if you eat it all we will have none for the pie"
Well the last time my sister and I made this together we discovered the Bisquick had worms in it, my sister had to run to the store and get more before my N mother came home at 5 pm, dinner always had to be on the table at 5:05 pm, no matter what.
Not sure why I thought of this today, maybe cause my sister sent me an e-mail and it got me thinking of her.
I have not cooked this in yrs, think it is about time to go shopping and make it for myself.
The last time I had a quiche was in France, when I had lunch at the Louvre, think it was Quiche Loranne...yummy...Anyways wanted to share this with you all
I found it on the internet and said hum...my sister and I modified it a bit, we used Sharp Chedder cheese cause that is what we liked, I even went back to my cookbook my N mother gave me for X-mas yrs ago, she hand typed the recipe in and it had the same thing, modify this to whatever you and enjoy:
Impossible Bacon Pie
Ingredients:
12 slices of bacon, cooked and crumbled
1 cup shredded swiss cheese
1/4 cup chopped onion 2 cups milk
4 eggs
1 cup Bisquick
1/8 teaspoon pepper
Directions:
Preheat oven to 400 degrees.
Grease 10 X 1 1/2 inch pie plate
Sprinkle bacon, cheese, and onion in pie plate.
Beat remaining ingredients 15 seconds in blender on high speed.
Pour into pie plate.
Bake 35- 40 minutes or until knife inserted in the center comes out clean.
It is a quiche so it will be a light meal in some ways, not very filling, you may want to make more than one, especially if you have more than 3 people.
