Hi Topaz123, Homemade pickled onions, as simple as that. I'm almost ashamed to say that I had never thought about sorting myself with some pickled onions in that way. I usually just buy a big jar of them from the supermarket.

Food has always been something which i have had little time for, I think because i have been so busy boxing other things off in my life. But now i am really into the idea of entering a new age of culllinary maturity; this is why I am getting excited about sandwiches, and all the variations. So, Topaz123, thanks for that pickled onion tip. emoticon

you are welcome. If you want to do the jar ones though its jkust as simple.

peel the small pickling onions, put into a clean dry jar .

Boil up some distilled white malt vinegar and add pickling spices.

Pour over onions and seal with a tight fitting lid. Keeps for months un opened.

I'm interested in picking and preserving. I bought some glass jars, the ones made for the job, with the rubber seal and the wire which clips down to seal it. I have an allotment, which I'm just about to start growing things, and I have built a mini greenhouse at the back of my house. So i am really excited at the idea of pickling onions I have grown.

I also am interested in, well, i think the idea is a bit like tinning foods, where you have to heat up the food in the jar and then seal it.

Also, i am very interested in 'how they used to do things' before this very technological 'all done for you' age we have been living in. I'd like to make butter and cheese, for instance. So if you are into that kind of thing, I would always be happy to hear anything. So, thanks. Anyway, I have got the ingredients for the chicken, avacado, mayo and lettuce sandwich, so I'll be trying it out tonight. My daughter is over, so we'll sample it together and discuss its merrits.

Hey lotty that sounds pretty cool, pickeling your own stuff.

I may make Alton Browns butter chip pickles, when it is warm enough for me to get out to store, you dont have to can them just make sure jar is sterilized, I think they would be more tasty homemade like this.

Have you ever heard of the SLOW FOOD movement? In my old town, I used to go to farms to buy organic food.

Alton Browns butter chip pickles....... never heard of them. They sound great. I just can't imagine what they are..... a buttery chip of a vegetable or something which has been pickled??????

I have not heard of the SLOW FOOD movement. Is that a sort of anti fast food thing. Must be. Unless it is an action/pressure group for snails who are demanding more lettuce on the menu.

You say you used to go to farms to buy organic food. I know you are unwell with health. Wish i could make it so you could still go and do that.

But you can still grow things on window sills. I know it is not the same, but it is something to be involved with. Ha, ha, ha.....I have just imagined someone's home window sill with pots of potato plants and brussel sprouts. I suppose there are limits.

The chicken, avacado, mayo and lettuce sandwich I find to be very good. I never realised just how good sandwich cuisine can be, and i struggle with food a bit, meals that I can look forward to, so all this has been a bit of a nice surprise. If anyone has a sandwich suggestion I would be interested to hear it.

I've just been reading about triangulation. Wow, there are some really messed up people out there. I am sooooo glad I am out and away from all that kind of thing.

It has been a difficulty thing for me, being involved with a chaos maker, but I am pretty much though the effect of it.

My recovery strategy was to a) embrace the situation and accept the hurt/loss and necessary change, b) to educate myself on narcissism, and c) to keep my spirits up with fun, and also to BE ABLE TO ENJOY CONVERSING LIGHTLY ABOUT TRIVIAL THINGS. Hence, chatting about sandwiches, etc. Personally, I think light and trivial chat is a very healthy thing, and is also a help to recovery.

I'm lucky enough to have a Pret 2 min walk from work. My favourites are:

Beef and Horseradish
Brie and Cranberry

...and I love chicken and avocado too...

I love it when they do anything with chilli jam or caramelised onion chutney!!! (You can get the latter from M&S...great with any cheese)

Which reminds of a funny story of my mum who is diabetic and we all went on holiday and gave her a hard time for eating biscuits and chocolate and anything sweet she could get hold of...so we had to hide everything sweet in the end. I came down one morning to find her eating toast and jam with a very strange look on her face......

...yes ...she was eating my chilli jam!!

Goodness! All those fantastic sandwiches at that butty shop you linked. Truely, I did not know that sandwich fillings were at such an advanced level. I think I have been living under a rock!

The thing is that i have had to watch my pennies for ever since I can remember, and this has put me out of the loop, so there's lots of things I just don't know about. I suppose it is a bit sad really. But I just, even now when things are better for me, cannot bring myself to spend on things which i can do much cheaper myself. I just can't bring myself to do such spending. I accept i have been affected. I feel like I am still living in wartime Britain with food rationing, Waste Not Want Not, etc.

Pulled pork with cole slaw. yum! A sweet n sour cole slaw made with sugar and vinegar. I Pittsburgh my daughter and I had the famous sandwich of the Primanti Brothers with corned beef, cole slaw and home cut french fries on the sandwich on a great thicker cut bread. Ready to go back for one!

Monsvo, ha, ha, ha, that sandwich by the Famous Primanti Brothers sounds great. I can see that you would have to try it if you were over that way, and you can see how you could get so whipped up about it that you would go right out of your way to get one, like Elvis started doing. You've got me wanting a sandwich by the Famous Primanti Brothers....what was it, corned beef and chips on a big doorstep butty. Mega. emoticon
