FAIRY KISSES FOR YULE

To make 20 Fairy Kisses Cookies, you will need the following:
1 stick butter, softened
1 teaspoon vanilla
½ cup powdered sugar
1 cup all-purpose flour
3 Tablespoons cornmeal
¼ cup shredded coconut
Powdered sugar for dusting
2 Tablespoons seedless raspberry preserves

Before you start, grease two cookie sheets with cooking oil. Preheat your oven to 350 degrees F.

1. Put the butter into a large mixing bowl and stir it with a wooden spoon until it is creamy. Add the vanilla.

2. Sift the powdered sugar through a sieve into the bowl. Stir the mixture until it is smooth and creamy.

3. Sift the flour and the cornmeal into the bowl. Add the coconut and stir everything well to make a soft dough.

4. Rub some flour on your hands. Scoop up a little of the dough with a teaspoon and roll it into a smooth ball.

5. Make more balls and put them on the greased cookie sheets. Leave spaces between the balls, because they spread as they cook.

6. Push your little finger into the middle of each ball, to make a hollow. Push it in up to the first knuckle.

7. Bake the cookies for 13 minutes. Carefully lift them out of the oven, and then leave them to cool on the cookie sheets.

8. When the cookies have cooled, sift some powdered sugar over them. Use a teaspoon to fill the holes with preserves.

Keep the cookies in an airtight container and eat them within a week.
