Smucker's Sugar Free Strawberry Angel Cookies
My husband is a diabetic. I do not know if any of you are or not or maybe you have someone in your family that is. I have not had good luck cooking sugar free sweets. Most of the time, a cookie more favors a hockey puck than a cookie. I found this recipe in a magazine and decided to make these for a Valentine treat for my sweetie. They turned out sooooo good that I am sharing the recipe.
This recipe calls for Sugar Free Strawberry preserves, I don't know why you couldn't use the sugar free Apricot, Blueberry or even Orange Marmalade instead. Also, who ever heard of only 3 tablespoons of chocolate chips. I used 6 tablespoons and used the darker chocolate as that is what my hubby prefers. I also added a couple tablespoons of chopped pecans.
STRAWBERRY ANGEL COOKIES
Ingredients:
No-Stick Cooking Spray
1 (16 ounce) package Pillsbury Angel Food Cake
¾ cup Smucker’s Sugar Free Strawberry Preserves
3 tablespoons mini semi-sweet chocolate chips
Directions:
1. Heat oven to 325 degrees F. Coat baking sheet with no-stick cooking spray.
2. Beat together cake mix and preserves at low speed of electric mixer until evenly moistened. Continue to beat 1 minute. Stir in chocolate chips.
3. Drop by rounded tablespoons on prepared baking sheet.
4. Bake 11 minutes or until tops are just lightly browned. Cool 1 minute on baking sheet. Place on cooling rack to cool completely.
Tip: Store between sheets of wax paper to keep cookies from sticking together.
