Sweet Potatoes


Did You Know?

One of our traditional dishes served alongside the turkey dinner is sweet potatoes. Whether you make them roasted or mashed, or serve them in a pie for dessert, sweet potatoes are one of the most nutritious vegetables you can eat. They are an excellent source of both vitamins A and C, they're full of dietary fiber, vitamin B6, potassium, and iron. Despite the "sweet" in their name, sweet potatoes help stabilize blood sugar levels and lower insulin resistance. Sweet potatoes are also good for your liver.

You can also roast sweet potatoes with onion,parsnips, carrots, zucchini and mushrooms in about 2 cups of broth - vegetable, chicken or beef at 300 degrees for about a hour or until the veggies are tender.

you can use what ever vegetables you like. A friend introduced that type of roasted veggies into our diet and we have passed on the tip to others. It is a easy dish and tastes great.

For whatever reason, I have never been a sweet potato fan and I love all root vegetables so it's weird I never developed a taste for those. However, my son when he was a baby (and now) omg loves them. I would microwave a sweet potato and put him in his high chair and would feed him a nice fresh mashed one for lunch.emoticon I love turnips and all other root veggies though. emoticon
