Happy 4th of July Weekend - Cracker Jack Cookies
Salute the flag and fire up the barbeque! It's a weekend for picnics fireworks and parades.
This is an old recipe from the 1930s.
Ingredients:
1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
2 cups quick cooking oats
1 1/2 cups flaked coconut
2 cups crisp rice cereal
1 1/2 cups chopped salted peanuts
Directions:
Preheat oven to 350 degrees F. Grease cookie sheets.
In a medium bowl, cream together the butter, white sugar and brown sugar. Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, baking soda, baking powder and salt, stir into the creamed mixture. Gently stir in the oatmeal, coconut, rice cereal and chopped peanuts, try not to pulverize the rice cereal.
Drop dough by teaspoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.

Morika, you have a husband who will make cookies from scratch? May I borrow him for a few days in November and December?
My hubby is a great cook when it comes to grilling. He is also a master with the wok for chinese dishes and he has made Pillsbury cookies from the premade dough but never a cookie from scratch. WOW! Tell us where you find such a man!

Lol...yes, I know...he IS quite a catch. He makes cakes from scratch too.
Winter is a long feed-fest here at this house, hence my size 16, lol.
