Mireille's Yellow Cake
Mireille's Yellow Cake (contains rice flour, tapioca flour)
Makes 2 round 10" cakes
This cake is very cheap: no expensive flours and no xanthan gum, no butter. But it is EXCELLENT nonetheless, as good as any good gluten cake.
And it is as easy to make as any expensive cake mix.
1 1/2 c. white rice flour
3/4 c. tapioca starch flour
1 t. salt
1 t. baking soda
3 t. baking powder
4 eggs
1 1/4 c. sugar
3/4 c. mayonnaise
1 c. milk
2 tsp (I used a little more) vanilla
Oven: 350F
Grease & sprinkle w/ rice flour 2 x 10" round cake pans
Mix all the dry ingredients except the sugar.
Using an other bowl, mix eggs & sugar at high for at least 5 minutes, until it has more than doubled.
Add mayonnaise and mix at high for 2-3 other minutes.
With the mixer at low, add 1/3th of the dry ingredients, then, half of the milk, then an other 1/3th of dry ingredients, the other half of milk, and finally, the last 1/3th of the dry ingredients.
Pour into the 2 cake pans and bake at 350F for 30 - 35 min. or until the top is springy and a toothpick comes out clean.
