Caramel Popcorn
Caramel Popcorn
Buttery toffee coated popcorn.
Ingredients:
12 cups freshly popped corn
1 cup almonds
1 cup packed brown sugar
1/2 cup light corn syrup
1/3 cup butter
1/2 tsp almond extract
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
Directions:
First, remember to preheat the oven to 300F.
Mix sugar, margarine and corn syrup into heavy saucepan. Boil this at a medium heat and stir. For 5 minutes, let the mix sit and boil without any stirring.
Remove from heat and add the vanilla, almond extract, salt and baking soda. Mix the popcorn and almonds together. Drip this over the popcorn and almonds and mix until well coated.
Pour it onto a baking sheet. Spread it out and keep it baking for about an hour. Stir half way about 1/2 hour into the baking.
*Let cool 10 minutes as the hot popcorn will burn if you try to handle it after you take it out of the oven*
Keep it in an airtight container after you give it time to cool off. Be sure to break apart clusters after it cools.
