Apricot Chicken & Sugar Snaps over rice
4 Servings
1 clove garlic, crushed & minced
2 tsp. sesame seeds
1/2 cup apricot jam
1 Tbsp. soy sauce
2 tsp. Dijon mustard
1 cup chicken broth
2 cups Diced Cooked Chicken Breast
2 cups Sugar Snap Peas, frozen or fresh
2 cups cooked rice
1. Saute garlic and sesame seeds in 2 tsp. canola oil or sesame oil over medium-high heat for 2-3 minutes.
2. Add jam, soy sauce, mustard, and broth. Cook for 5-7 minutes to reduce sauce.
3. Stir in chicken and peas. Cook an additional 3 minutes.
Serve over cooked rice.
