a new mayo...
As vegetable oils have been proved unsafe, we decided to make our own mayo to a new recipe.
I let others choose the quantities as it is really a matter of taste.
egg yolks
olive oil
apple cider vinegar
small amount honey
small amount xylitol
The reason for the honey and sweetener is that olive oil is not the best tasting oil in mayonnaise, being somewhat bitter.
If you don't have any xylitol, don't worry, honey is good - the xylitol is useful for protecting teeth, so we use it in things for that purpose.

Ugh. The mayo that I made with olive oil was really horrible! We've experimented with adding things to it but have ended up mostly using peanut oil or soybean oil. We don't have any extra eggs right now (all the chickens went to the farm ) so we haven't made mayo in a while. I'll give the olive oil a shot again!

We have experimented some since the first batch, and our best is using three egg yolks, and a tablespoon of honey. It created a nice flavored, thick mayonnaise, that hasn't got the bitter olive taste. We use a 'stiff' honey, so it was a heaped tablespoon, not a flat liquid measure.

As I posted in the health news thread, we have recently discovered a very sweet, light tasting extra virgin organic olive oil called
" Olio Beato ", that will be used for the next batch of mayo - it will taste fantastic. The oil is somewhat pricey, but we think very well worth it - so much in fact, that we ordered a case today.
