Don't do it.
Well, just out of curiosity, I canned some ripe tomatoes to see how they would come out. There is just way too much liquid between what is in the tomato itself and the water you can them in, and they fall apart when you try to get them out of the jar. Not to mention, the skins just come right off. This would be a good way to can ripe ones to use for maybe spaghetti sauce or tomatoes for chili or some such, but not to eat on sandwiches or anything like that. So....unless you want them for some kind of sauce, don't can ripe tomatoes...

Canned red tomatoes are pretty much only good for adding to sauces or soups! But of course, that's what I do with most of my tomatoes, so I usually can do can them!

I'll probably can some to use to make sauce or soup, add some onion to them. They just don't can well to use for sliced tomatoes on a sandwich or burger, or for a slice of tomato with your meal.
I do make some pretty good tomato juice, but I have quite a bit of that left from last year. We keep forgetting we have it in the basement LOL. I need to go "shopping" in our basement more often, I think.

blanch peel and dice your ripe tomatoes then add the other veggies you like on a sandwich like cucumbers, onions make a relish with them. I normally use a bread & butter pickle recipe and add the tomatoes, cucmbers, and onion. Closest I have come to being able to save ripe tomtatoes for a sandwich is to slice and dehydrate but they lose texture when you rehydrate.

I could make a type of salsa with them and use that on sandwiches and stuff. Hubby would love having something like that to put on his sandwiches...lol. Tomatoes, onions, hot peppers....I'll just hunt up a really good salsa recipe and see what I can do with that. Good idea, playful....Thank you!!!
