Canning has begun
Before leaving for our weekend with friends, I had to spend some time making pickles in order to keep the cucumbers from getting too big. I only ended up with 2 quarts, but they are really good pickles. I'll post the recipe in the Kitchen if anyone is interested. They're sweet pickles. I need to find a good dill pickle recipe...anyone got one??? Something that doesn't take forever and a day to do, preferably. I don't have the appropriate crocks for crock type pickles
DH just got our first ripe tomatoe out of the garden this past Thursday or Friday. I didn't even get a bite of it. He used it all on a sandwich...the meanie!!!
I've got to can some more green tomatoes. I took a quart jar with me for the 4th weekend...we had a snack of fried green tomatoes and fried jalapeno peppers (without the seeds)....talk about GOOD!!! The squash is also coming in, so it's about time to start canning that as well. We're not getting a WHOLE lot due to lack of water/rain, but we're getting some, so I'm not complaining!!
The corn still has some growin to do, as does the okra and a few other things, but at least we've started.
And now, I need to get sheets off the clothesline and folded and get some more laundry washed and out on the line!!!

I've not been on the farm in almost 3 weeks now! So no canning for quite a while. The garden right now is producing just the right amount for the subscribers so we don't have any overage either. But the Monarch and I are putting in corn this weekend and we will have plenty come October!!!

Canning doesn't start here till September!
the garden is doing well (with the addition of well rotted donkey manure this spring). Stuff looks beautiful. the weather has been very strange (cool, hot, mostly cool....just hoping we don't get any frosts). It's the prettiest garden I've seen here in many years.

Yesterday I canned 3 quarts and 2 pints of green tomatoes, today I canned 3 quarts and 1 pint of dill pickles, and I've canned 4 pints of hot pepper sauce with onions. We've not gotten enough green beans to can yet, so what we did get, most went into the crock pot last night and the rest went to the freezer. DH went and picked me some okra so I can make another effort at some pickled okra. Hope this batch turns out better than the last one I did!!
I've been pretty lucky so far, everything has sealed, so I'm happy about that!!!
