What kinds of things is your son getting in his garden right now? And what all are you canning and freezing??
Did you know: You can break your green beans, leave the dirt on them, and toss them in a freezer bag without doing ANY OTHER WORK to them? Yep, you sure can. You just wash the beans when you're ready to use them. The dirt helps to maintain their freshness and taste.

what do you mean by "break your green beans"? i understand the not washing before freezing just not sure what you mean by the first part

I think Saijen was referring to green beens as from bush beans. At least those we used to snap into two pieces or so before freezing them. My mother also threw them into boiling water for a minute or two before freezing them.

'breaking beans'...as Firle mentioned, is basically snapping the beans into several pieces. Depending on how long a bean is, I can usually get about 5 pieces snapped/broke from one bean.
And thank you, Firle for helping with that....without that, I would have been lost for a way to put it LOL
You don't even need to put them in hot water (blanch) them before putting them into the bags.
